Cajun spiced tuna tacos with charred ramps and blood orange salsa, pea sprouts, avocado. Amazing! 

These amazing yummy creations were the special I created for Raised at the Renaissance Chicago Downtown Hotel. I love to continue to experiment with the balance between heat and citrus and other flavors. These tacos have an amazing flavor profile and also have an added crunch that comes from the use of bean sprouts.
